MJ's Pumpkin Bread

 

I've been making this alot lately with all the Seminole Squash that's been volunteering in our Central Florida backyard.Original recipe from Libby's, I've decreased the sugar and upped the spices. In regard to the OJ, I keep a quart jar of Publix frozen concentrate OJ in my freezer, and spoon out a few big spoonfuls into a measuring cup, then enough water to get to the 1/2 cup line.

 

Ingredients:


3 c flour
2 tbsp pumpkin pie spice (see note)
2 tsp baking soda
1-1/2 tsp salt
2 c granulated sugar
1 can (15 OZ) pure pumpkin
4 lg eggs
1 c vegetable oil
1/2 c orange juice or water
1 c sweetened dried, fresh, or frozen cranberries

Directions:
Oven 350 deg. 60 to 65 min. Two 9 x 5 loaf pans

Combine flour, pumpkin pie spice, baking soda and salt.
Combine sugar, pumpkin, eggs, oil and orange juice in
mixer bowl. Beat until just blended. Add pumpkin
mixture to flour mixture, stir just until moistened.
Fold in cranberries. Spoon batter into greased loaf
pans. Bake 60 to 65 minutes or until knife comes out
clean. Cool. Also makes five mini loaves. Bake only
50 to 55 min.

Note: to make your own Pumpkin Spice (why not?) grab an old spice jar or glass jar:

Ingredients:
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground nutmeg
1/8 tsp ground allspice

or

4 tsp cinnamon
2 tsp ginger
1 tsp nutmeg
1 tsp allspice

or

2 TBSP cinnamon
1 TBSP ginger
1.5 tsp nutmeg
1.5 tsp allspice
